Southwest Florida has developed a taste for specialty meats, and that’s thanks to chef Shannon Yates’ Cult Carne.
This isn’t your regular “cult”, though. It’s not for the faint of heart and they believe in a sophisticated palette of carnes (meats) that are rich in texture and flavor. It’s a “cult”-ure of something top-notch, sometimes exotic and always tasty.
“I’m pretty fascinated with the whole meat and beef, game and everything industry,” Yates says. “I’m talking about everything from barbeque to American grill, to Asian, European and everything in between.”
Seeing a gap in the market, this always-innovative meat lover designed a monthly event at his and Brittany Bowman’s Nevermind Awesome Bar & Eatery in Cape Coral that would carry super high-end, deluxe meats that people don’t normally have on their menus, and can’t get unless they leave this area.
With two reservation-only seating’s, at 6 pm and 8:30 pm, Cult Carne attracts nearly 100 patrons monthly. The idea is to bring people together for a meaty epicurean experience that employs a food culture, Yates adds.
It’s about mouth-watering veil, game beef, delicious buffalo, juicy pork chops, top-quality lamb, elk…the list goes on and on. Wild, cured, smoked, grilled, familiar and foreign. The objective is simple — activate a depth of flavor fitting to all likes.
“I’m one that doesn’t mask flavors of food. I like that if you’re going to get a good piece of domestic Colorado lamb, why are you going to dump a big port wine sauce on it? I’m very clean — sea salt and a good mix of ground pepper to bring out the actual flavor of the product is the only thing necessary. I’m also big on vegetables or things that surprise customers like Brussels sprouts,” he adds.
Menus vary monthly, although Yates admits leading to certain requests. For example, April 6 will include some off-kilter choices including Venison Burgers, a Chateaubriand 20-ounce cut or an 18-ounce Tuna. Each serving is for two guests and comes with three sides and a dessert.
“The anticipation for the event is always huge,” he adds. “Thanks to Nevermind being such a small signature place, patrons have really bonded and formed a refreshing camaraderie. We also throw-in something fun like a branded steak knife, an apron, a cutting board, a small gift that ties the whole experience together and continues cultivating what the event is all about.”
Yates goes on to say that quality cuisine continues growing ferociously in Cape Coral, and the fact that people are eating these kinds of products here tells you exactly “what is moving, eating and breathing in our area.”
